I have gotten a bit derailed again on my 2017 goals. During February and March, I stopped working out, logging meals, and tracking my progress. I gained back 4 of the pounds that I lost in January. I did still try to keep up with branching out and my Sisters’ Cookbook Challenges. I am using this post to get back on track. Yesterday, I ran in a 4.01k for Financial Fitness with my boyfriend, and a friend from work. This month I am committing to 15 workouts. I am 2 days in and 2 workouts in.
After my boyfriend and I had our romantic dinner at home (See Valentine’s Day Dinner), he had to go out of town for a few days for a conference so he missed the actual Valentine’s Day on 2/14. I did not want to miss out on the opportunity for a good meal, so I cooked a fancy dinner for a couple of girlfriends and had a GALentine’s dinner instead. My roommate’s mom is from Thailand, so over the past couple of years, she has been helping me out by giving me some of her recipes and tips. This meal was awesome and I was so happy that I tried it out!
First Course: Seared Scallops in Red Curry
Second Course: Asian Pot Roast and Green Risotto
Third Course: Sticky Rice with Mango
This year for Valentine’s Day, my boyfriend and I decided to stay in in order to have an awesome meal while we saved some money. At our grocery store, they have a Valentine’s Day special that includes 2 KC Strip Steaks and 2 lobster tails for $20. Also, my boyfriend recently bought a sous-vide and we had been waiting to try it out. Also – I found this awesome frozen strawberry-rhubarb pie at the butcher shop. This pie was from a place called “The Village Pie Maker” in Nebraska. Overall, the meal was just awesome.

Last week’s recipe was my choice. A Cuban Picadillo which I served with rice. This was a delicious and easy meal. I really loved the olives. I added extra to mine!

This week’s choice was a slow cooker white chicken chili. Personally, I was not a big fan of this week’s recipe. To me, it lacked flavor and was basically just chicken in broth. It did not help that I forgot to add onion, but I’m not sure it would have made a great improvement without it. The recipe says that the toppings are they key, and that is definitely true. I think if I made this again, I would use less broth and more spices! Overall, it was healthy and low-calorie, but it wasn’t a very satisfying meal.

We are just over one month in to 2017 and I am starting to feel better about my year already. January went pretty well as it comes to my goals for this year, and I am excited to keep it up. Here is a quick update on my goals.
Get In The Habit of Working Out
I did not quite make my goal of making a habit of exercising 3 times per week. I am headed into our less busy season at work, and I am excited to get going with this one. In January, (according to my Fitbit app), I exercised 10 times. This is a big improvement, but February is going to be the month when I do it!
Eat for Health
I have been doing a good job this year of trying to eat for health. I think what helps most is logging everything in MyFitnessPal. The app syncs with my Fitbit application and I get extra calories when I work out. On days that I do not have time to exercise, or don’t make it a priority, I have to limit my calories to meet my goal. According to my app, I logged my meals on 21 of 31 days in January and of those days and met the calorie goal 10 of those days. That does not sound great, however as of today, I have lost 6 pounds since January 1st! I am hoping to improve my diet more this month and see how it pays off!
I have been slacking a bit on branching out, but am excited to try a few new things this month. In January, I signed up and went to a makeup class at Sephora. I loved it! I have signed up for 2 more classes this month. In February, I have also scheduled an appointment at an eyebrow salon, which I am pretty excited for. A couple of things that I would like to do this month are: try a new fitness class and to try a new coffee shop!
Drink for Enjoyment
If I have improved most in one area, I think that this is it. I used to have a glass of wine (or 3) almost every evening and would tend to go out with friends and have several drinks at least once every weekend. I have almost fully cut out drinks during the week – With exception of a glass of wine here and there with dinner and some drinks for events with friends. I have already noticed that I feel better. This is even more apparent when I wake up after I have had a glass of wine or two. I still like having drinks with friends and drinks with dinner, but now I don’t feel like I need to do it every day.
That’s that for the month of January. I will check in again at the end of the month!
This week’s recipe was a simple slow-cooker chicken dish. This was an excellent healthy chicken that could be used in a taco salad, tacos, or even just served with rice. I had mine as chicken tacos with flour tortillas, radishes, cilantro, shredded cheese, and avocado. My sister had taco salad and is really excited about this recipe. All in all, this is a super easy, delicious shredded chicken recipe.
